<p><em>Let me introduce my dearest Carmen to you all.</em></p>
<p><em>She is THE SADDEST, WEIRDEST, and CUTEST dog ever!!</em></p>
<p><em>I’ve always had a dog in my household growing up. But honestly guys, I have never met a dog this expressive. Her eyes just remind me of ASPCA commercial! I just can’t deal with her sometimes lol. Real talk though, ever since I adopted her, she has been my rock. She just brings joy and peace to my soul. I sound a little crazy when I talk about her sometimes, I know. But I am proud to say I’m obsessed with this one.</em></p>

<h1>So, here is her life story…</h1>
<p>She grew up in Baltimore city when she was a lil pup. She was cute as a peanut, just living her cute little life minding her own business (I’m just making stuff up lol).</p>
<p>One day, her owner got arrested. She didn’t understand what was happening. She left her house and walked around the city. She was a little scared at first, but she loved the fresh air and FREE FOOD!</p>
<p>Little did she know, something bad was about to happen to her. The craziest day of her life! She was walking around the city as usual. And then…BAM! This scary dog ran towards her and bit her! She was so shocked that she couldn’t even fight back. Fortunately, a nice person saw the event and <u><a href="https://barcs.org/">barcs</a></u> (shelter) took her in (This is what the shelter lady told me). She was very traumatized, so shelter people thought she needed a foster parent before going into adoption. This is when I come in.</p>

<p>My roommate at the time brought me this idea of fostering a dog. We all had such stressful lives then (and I guess we weren’t very good at managing our stress), so we needed something to lift our spirits up. A week later or so, we visited barcs to get some information. We’re both dog people, so obviously, we decided right then and there, “we have to do this!”</p>
<p>We submitted some paperwork and a few days later, we went back to barcs to take a class. That’s when we met her for the first time. Unlike adoption, we didn’t have any options to choose from. The barcs lady looked at our information and chose her for us. When we first saw her, her kennel was right next to this huuuuge dog’s kennel (the dog was probably bigger than me), and she was quietly sitting in a little corner. I never had an experience with a pit bull, so I was a little skeptical (now I know, and I feel super guilty for saying this). Also, the lady told us that day she needed to be quarantined for FOUR MONTHS because of her injury, which I honestly couldn’t tell.</p>
<p>We brought her back home (they gave us a crate, too, of course) and slowly introduced her to this new environment. She was very timid, but I could tell that she was happy. She laid down on the floor like a little frog and adapted to this new space so fast. She was fully trained and honestly we did not have to teach her anything. Everyone loved her and she loved everyone, too.</p>

<h1>4 months later…</h1>

<p>Obviously, our bond became very strong. She really became a part of the fam. We asked everyone we knew if they could adopt her. We didn’t want to fully lose her, you know? Like hello? four months is a loooong time! But….time was up. We had to take her back to barcs so that they could start the adoption process for her. So, we took her back in. We even had a good-bye party for her. I said good-bye to her little scared self. Her tail was completely tucked in, and she kept looking back. Oh my gosh, I don’t think I could ever forget that moment.</p>
<p>I cried, cried, and cried. I literally could not deal with the fact that I had to let her go. I asked my bf, my family, everyone what I should do. Should I adopt her? Can I afford a dog? Can I really be a good dog mom? Is it worth it?</p>
<p>The next day, I was there. At barcs. Signing an adoption form. I had to do it. Yep, I failed fostering. I just loved her too much!</p>

<p>So, this is how Carmen became my family. This is her story.</p>

<h1>Fried Rice Balls</h1>
<p></p>
<h2>Ingredients</h2>
<ul>
  <li>3 cups of rice</li>
  <li>3 tbsp soy sauce</li>
  <li>1 tbsp dashi (shirodashi or dashi powder)</li>
  <li>1 tbsp mirin</li>
  <li>Sesame oil</li>
  <li>2 cloves garlic</li>
  <li>3 cups of water </li>
</ul>

<h2>Directions:</h2>
<ul>
  <li>Rinse rice thoroughly.</li>
  <li>Put the rice in a rice cooker and add soy sauce, dashi, and mirin.</li>
  <li>Add about 3 cups of water into the rice cooker. Mix well.</li>
  <li> Places 2 cloves of garlic in the middle and turn on the rice cooker. Wait till done.</li>
  <li>Once rice is cooked, mix it well. </li>
  <li>Separate the rice into 8 and form them into triangle using plastic wrap.</li>
  <li>Heat a pan with low heat and coat the pan with sesame oil.</li>
  <li>Place rice balls onto the pan and fry them till they start browning. Make sure to fry all sides.</li>

<h1>Banana Earl Grey Tea Bread</h1>
<h2><em>Total time: 1h</em></h2>
<h2>Ingredients: </h2>
<ul>
  <li>1/2 ripe banana (we’ll use total of 3 bananas for this recipe)</li>
  <li>1 earl grey tea bag</li>
  <li>2 tbsp chia seeds</li>
</ul>
<p><strong>Dry ingredients</strong>: </p>
<ul>
  <li>2 cups AP flour</li>
  <li>1 tsp baking soda</li>
  <li>A pinch of salt</li>
</ul>
<p><strong>Wet ingredients</strong>: </p>
<ul>
  <li>1/2 cup unsalted butter (room temperature, coconut oil as an alternative)</li>
  <li>3/4 cup brown sugar</li>
  <li>2 eggs (1/2 cup of apple sauce as an alternative)</li>
  <li>2 1/2 ripe banana (mashed)</li>
  <li>1 tsp vanilla extract </li>
</ul>
<h2>Directions:</h2>
<ul>
  <li>Preheat the oven to 350 F and coat the loaf pan with nonstick oil spray. Set aside.</li>
  <li>Combine the dry ingredients in a medium bowl.</li>
  <li>In a large bowl, combine butter and brown sugar. Mix till creamy.</li>
  <li>Add eggs, mashed bananas, and vanilla extract into the large bowl (the rest of the wet ingredients). Mix until completely incorporated.</li>
  <li>Combine chia seeds and tea leaves (open the tea bag and mix in the leaves) into wet ingredients mixture.</li>
  <li>Gradually add dry ingredient mixture into wet ingredients and mix into there are no flour sockets.</li>
  <li>Spoon the batter into the loaf pan and top with banana slices (1/2 banana). Bake for about 50 minutes.</li>
  <li>Once baked, make sure to stick a toothpick in the middle and see if it comes out clean.</li>
</ul>

<h2>Ingredients:</h2>
<ul>
  <li>3/4 cup Waffle (pancake mix)</li>
  <li>2/3 cup water</li>
  <li>1 3/1 tbsp oil (I used coconut oil)</li>
  <li>1 tbsp matcha powder</li>
  <li>1/3 cup chocolate chip</li>
</ul>

<h2>Directions: </h2>
<ul>
  <li>Mix all the ingredients together </li>
  <li>Heat up the waffle maker and coat it with oil (I used coconut oil)</li>
  <li>Pour about 1 cup batter on each side (my waffle maker makes 2 at a time)</li>
  <li>Wait till it’s done, dress them with some fruits and honey…..voila!</li>

<h1>Miso Mushroom Bruschetta </h1>
<p>You might wonder “why miso?”, but trust me. It’s the best easy app you’ve ever had.</p>
<p></p>

<h2>Ingredients: </h2>
<ul>
  <li>1 pack of mushroom</li>
  <li>2 cloves garlic </li>
  <li>1 tsp crushed red pepper </li>
  <li>5 tsp olive oil </li>
  <li>A small piece of dried kelp</li>
  <li>1 tbsp miso</li>
  <li>French baguette</li>
  <li>Cream cheese</li>
  <li>Chive</li>
  <li>Parmesan cheese</li>
</ul>
<p>
  <h2>Directions:</h2>
  <ul>
    <li>Slice the garlic.</li>
    <li>In a small sauce pan, add 2 tbsp olive oil and sliced garlic, simmer with low heat till you get the aroma.</li>
    <li>Add the rest of olive oil, crushed red pepper, and dried kelp and simmer till the garlic starts browning.</li>
    <li>Add the mushroom and miso and simmer till mushroom is cooked, set aside.</li>
    <li>Slice the baguette and toast them in the oven.</li>
    <li>Rub a garlic onto the baguette slices.</li>
    <li>Spread generous amount of cream cheese on the baguette and put on some olive oil.</li>
    <li>Put the mushroom on top.</li>
    <li>Chop some chives and sprinkle on the bruschetta.</li>
    <li>Add some Parmesan cheese on top…………there you go!🤍 </li>
  </ul>
