Buddha Bowl
Recipe:
• Very generous handfuls of Spinach
• 1/4 of a Cucumber
• A handful of Cherry Tomatoes, sliced in half
• 1/2 cup of Quinoa
• Handful of cooked Mushrooms
• 1/3-1/2 cup of roasted butternut Squash
TIP: roast frozen butternut squash in the oven with a little bit of salt, pepper, and turmeric for 30 minutes at 350 degrees
Homemade dressing:
(Will Make Extra)
• 1/3 cup Balsamic Vinegar
• 1/2 cup Extra Virgin Olive Oil
• 2 Tbps of Maple Syrup
• 1 tsp Dijon Mustard
• 1/2 tsp Italian Spice
• 1/4 tsp Dried Garlic Powder
• Salt and Pepper to taste
