Ingredients

1⁄2 medium sweet potato

1⁄2 avocado, smashed with salt & pepper

I didn’t add the protein but feel free to top it off with some protein of your desire!

Here are some protein ideas:

● Boiled eggs

● Prosciutto

● Smoked salmon

How to:

1. Slice the sweet potato approx 1⁄8" thick.

2. I toasted at 350F for 10 mins each side.

3. Top with avocado, add salt and pepper
